The Easter bunny’s favourite: Carrot cake slices with cream cheese frosting

Easter is right around the corner! Not that I need an excuse for eating delicious things but big celebrations are always a good reason for me to get baking. I know carrots are probably not the first thing that springs to mind when you think Easter… you’re more likely to think chocolate, eggs and of course hot cross buns. This Easter recipe is not related to any of these things but rather dedicated to the childhood fantasy of the Easter bunny. There are few things as magical as the look on a child’s face when they really truly believe that the magical floppy eared rabbit has paid them a visit…

These slices are moist and nutty. They are not that difficult to make and the cream cheese frosting just gives them that extra edge! Also, they contain carrots so it’s basically like eating a vegetable ;).

Carrot Cake slices with Cream Cheese

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes


Carrot Cake Slices

  • 2 small carrots grated
  • ¼ cup walnuts chopped
  • ¾ butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 2 tablespoon milk
  • 1 teaspoon vanilla
  • 1 cup flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • A pinch of salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Cream Cheese Frosting

  • 1/4 cup butter unsalted, softened
  • 1/2 cream cheese
  • 1 cup icing sugar
  • 1 tsp vanilla essence
  • 1 tsp lemon zest


Carrot Cake Slices

  1. Line a 25cm x 25cm baking sheet with baking paper
  2. In a medium bowl cream the butter with the sugar until it becomes light in colour. Then add the eggs one at a time mixing well.
  3. Next, add the milk, and vanilla.
  4. In another bowl sift the flour, baking soda, salt, cinnamon and nutmeg.
  5. Add the dry ingredients to the wet ingredients and mix just until the dry ingredients are no longer visible, do not over mix.
  6. Gently fold in the walnuts and carrots.
  7. Bake for 18-20 minutes. Allow to cool completely and then cut into bars. Serve as is or top with Cream Cheese Frosting

Cream Cheese Frosting

  1. Beat the softened butter and cream cheese together until smooth.

  2. Add the icing sugar a bit at a time while beating.

  3. Add the vanilla essence and the lemon zest and mix well.
